PRIVATE CHEF

I arrived in Sri Lanka on the 1st of November 2019 to be a private chef for 3 Polish families with kids! After traveling for weeks without any time in the kitchen, it took a couple hours to get my bearings straight! Its very important for me to sit down with my clients and create a menu based around their favourite fruits and vegetables and most importantly their favourite flavors.

From there, i allow my creative juices to flow in the kitchen! Getting to know the families over three weeks was absolute bliss. Cooking for kids is always a challenge.. their taste buds are very under-developed and they really just want the simple things! I made all different types of fruit-based smoothies with the delicious tropical fruits and endlessss supply of coconut milk or coconut water! Raw cacao, mango, cinnamon, pineapple, banana and passion fruit where all flavours that got the kids asking for more! The polish family was more savoury than sweet, which was great as i got to experiment with flavours like olives, capers, liquid smoke, chilli, mushrooms, beetroot and lots of tomatoes! As none of the guests were Vegan, it was the perfect challenge to trick their taste buds with dishes like Chickpea omelettes stuffed with sautéed onions, carrots, tomatoes and spinach served on toasted sourdough with a drizzle of coriander pesto. I also made “fish” burgers with white beans. nori, capers and spices served with paprika roasted potato wedges!

Three weeks straight of countless pots of coffee, It was an honour to connect, create and cook up a storm for 14 Polish humans!
